Hi, I’m Estelle Tracy, a chocolate sommelier based in the Philadelphia area and the founder of 37 Chocolates, a chocolate experience company.

Nothing makes me happier than witnessing someone try a piece of craft chocolate for the first time. “Wow, I didn’t know chocolate could taste like this!” is my favorite phrase to hear. For that to happen, I must ship chocolate safely and on-time before each event.

Thankfully, I’m also a shipping nerd. Since 2020, I’ve hosted over 350 online tastings to attendees based in 5 continents and shipped over 3,500 packages to dozens of countries.

I love geeking out on logistical routes, betting with myself on how long a package will arrive to San Francisco, New York, or Miami. I’ve worked with all major carriers and now know which brokers have the most user-friendly interfaces.

In the summer, I experiment with different insulation materials to see which one will offer the best performance for the least environmental damage.

For the past couple of years, I’ve helped countless colleagues save money on shipping by introducing them to the right resources. When summer rolls around, I share my tips to keep chocolate cool by using the right insulating materials and gel packs.
